Ingredients:
500g white fish (hake, cod)
3 large potatoes
2 carrots
1 onion
2 garlic cloves
1 green pepper
2 ripe tomatoes
1 bay leaf
4 tablespoons olive oil
Salt to taste
Pepper to taste
Chopped fresh parsley to decorate

Instructions:
Peel and slice the potatoes and carrots. Set aside.
Finely chop the onion, garlic and green pepper. Grate the tomatoes.
In a large pot, heat the olive oil and add the onion and garlic. Sauté until golden.
Add the green pepper and grated tomatoes. Cook for a few minutes until the tomatoes reduce.
Add the potatoes, carrots and bay leaf. Stir well and cover with water.
Cook over medium heat for 20 minutes or until the potatoes are tender.
Add the fish cut into pieces and season with salt and pepper to taste.
Continue cooking for 10 more minutes, until the fish is cooked.
Remove from heat and let rest for a few minutes before serving.
Garnish with chopped fresh parsley and serve hot.
