Ingredients:

For the potatoes:
1kg potatoes, peeled and diced
2 tbsp olive oil
Salt and pepper to taste
For the brava sauce:
2 tbsp olive oil
1 onion, finely chopped
2 cloves garlic, chopped
1 tsp sweet paprika
1 tsp hot paprika
1 can crushed tomatoes (400g)
1 tsp sugar
Salt and pepper to taste
For the aioli:
1 egg
1 clove garlic
200ml sunflower oil
Juice of ½ lemon
Salt to taste
To decorate:
Fresh chives, chopped
Instructions:
1️⃣ Prepare the potatoes:
Preheat the oven to 200°C (400°F).
Place the potatoes on a baking tray and toss them with the olive oil, salt and pepper.
Bake for 30-35 minutes, stirring halfway through, until golden and crispy.
2️⃣ Prepare the brava sauce:
In a large frying pan, heat the olive oil over medium heat.
Add the onion and garlic, and cook until soft.
Stir in the sweet and hot paprika, and cook for 1 minute.
Add the crushed tomatoes, sugar, salt, and pepper.
Simmer for 15-20 minutes, stirring occasionally, until the sauce thickens. Let cool slightly and blend until smooth.
3️⃣ Prepare the aioli:
In a blender, add the egg, garlic, lemon juice, and a pinch of salt.
With the blender on low speed, add the sunflower oil in a continuous stream until the mixture emulsifies and thickens.
Adjust salt to taste.
4️⃣ Assemble the dish:
Place the potatoes on a large plate.
Cover with the hot brava sauce.
Add a generous spoonful of aioli in the center.
Decorate with chopped fresh chives.
