Pork liver, mashed potatoes and peas!

Ingredients:

Pork liver
Potatoes
Peas (fresh, frozen or canned)
Onions
Butter
Milk
Salt and pepper
Flour
Stock or water

Preparation:

Peel the potatoes, cut into pieces and cook in a pan of water until soft.
Peel the onions and cut into thin slices.
Rinse the pork liver and pat dry. Cut into bite-sized pieces and dust lightly with flour, salt and pepper.

Mashed potatoes:

Drain the cooked potatoes and mash them or press them through a potato ricer. Add milk and butter to achieve a creamy consistency. Season with salt and pepper.

Fry pork liver:

Heat a pan with a little butter or oil.
Fry the prepared onion slices until golden brown.
Add the prepared liver and fry over medium heat until cooked through. Be careful not to over-fry the liver so it stays tender.

Peas:

Heat the peas in a saucepan with a little water or stock. If you are using fresh peas, cook them until they are soft.

Serve:

Place the mashed potatoes on a plate, top with the fried pork liver and onions and serve with the peas as a side dish.
