– Steps :

1. Prepare the Apples: Chop the apples into medium-sized pieces, including kernels and peels, to add nutrients and flavor. You can mix different types of apples for a variety of tastes.
2. Sugar and water: dissolve sugar in water. Pour this mixture over the apples in the jar until they are completely coated. This helps convert sugars into alcohol, a crucial step in vinegar making.
3. Cover and wait: Place cheese stuff or coffee filter on the pot, fastening it with rubber band. This allows air to get in for natural yeast while avoiding insects and debris.
4. Fermentation: Store the pot in a dark, warm place for 3-4 weeks. Stir occasionally to facilitate the decomposition and release of flavors.
5. Filming: After initial fermentation, remove solids and return the liquid to the jar for more fermentation
6. Second ferment: cover in fabric again and let sit for 4-6 weeks, stirring occasionally. Alcohol will turn into acetic acid, giving vinegar its acidic flavor.
7. Taste and store: taste periodically until the desired flavor is achieved. Transfer to a sealed bottle for storage at room temperature. Use in one year.
