Fried potatoes with sausage and fried egg

Ingredients:

2 onions
1 leek
1 small bunch of parsley
2 – 3 tablespoons clarified butter
1 tablespoon butter

1.2 kg potatoes
120 g smoked bacon
4 coarsely boiled sausages
300 g small mushrooms
4 eggs
Salt, pepper and nutmeg

Preparation:

First, cover the potatoes with the skin on and cook for 15 minutes. Then drain, rinse and peel off the skin. Leave to cool. Then finely dice the bacon. Cut the sausage into slices. Clean the mushrooms. Peel and dice 2 onions. Clean the leek, wash it and cut it into rings. Wash, dry and chop the parsley.

Now fry the bacon in a large pan without fat until crispy, then remove. Fry the sausage in the bacon fat and remove. Fry the mushrooms all over in the frying fat. Season with salt and pepper. Add the onions and leeks and fry them too. Carefully remove everything.

Now cut the potatoes into slices. Heat clarified butter in a pan. Fry the potatoes in batches until golden brown, turning them. Add the bacon, sausage and mushroom mixture again and heat. Season everything with salt, pepper and nutmeg. Heat the butter in a non-stick pan.

Fry the eggs in it until they are fried. Season with salt and pepper. Sprinkle the fried potatoes with the fried eggs and parsley.
