Ingredients:

For the soup:

4 large peppers (red, green, yellow or orange)
1 onion, chopped
2 garlic cloves, chopped

A pinch of sugar
1 bay leaf

For the filling:

250 g minced meat (beef or mixed)
1 cup cooked rice
1 onion, chopped
2 garlic cloves, chopped
1 teaspoon paprika powder

Directions:

Cut the tops off the peppers and remove the seeds and white membranes. The peppers will serve as “bowls” for the soup, so they should be clean inside.

For the filling: In a pan, fry the ground meat together with chopped onion and garlic until the meat is brown. Add cooked rice, paprika, salt and pepper. The filling should be well seasoned.
Fill the prepared peppers with the ground meat and rice filling and set aside.

Heat the olive oil in a large saucepan and sauté the chopped onion and garlic until soft.
Add the diced tomatoes, vegetable stock, paprika, salt, pepper, a pinch of sugar and the bay leaf. Mix everything well.

Add the stuffed peppers to the soup and bring to a boil.
Reduce the heat, cover the pot and let the soup simmer for about 30-40 minutes, until the peppers are tender.
Taste the soup and adjust the seasonings as needed.

Serve the stuffed pepper soup hot. You can garnish it with fresh herbs or a dollop of sour cream if you like.
