Ingredients:
1 fresh octopus (about 1kg)
4 medium potatoes
1 tsp sweet paprika
1 tsp hot paprika
Extra virgin olive oil
Coarse salt
10 cherry tomatoes, halved
Fresh parsley, chopped
Instructions:

1️⃣ Cook the octopus:
Fill a large pot with water and bring to a boil.
Dip the octopus into the boiling water and stir it three times to “scare” it and soften its flesh.
Leave the octopus in the water and cook over medium heat for about 40-45 minutes or until tender. Drain and let cool.
2️⃣ Cook the potatoes:
Peel the potatoes and cut them into thick slices.
In a pot with water and salt, cook the potatoes until tender but firm, about 15-20 minutes. Drain and set aside.
3️⃣ Prepare the dish:
Cut the octopus into slices and place on top of the cooked potatoes on a large plate.
Add the halved cherry tomatoes.
4️⃣ Dress:
Sprinkle the dish generously with extra virgin olive oil.
Sprinkle the sweet and spicy paprika to taste over the octopus and potatoes.
Add coarse salt and chopped fresh parsley to enhance the flavor.
Garnish:
Decorate with a little more chopped fresh parsley before serving.
