Christmas baked apple cake, based on a recipe from my grandmother (1900) 🥰😉

Ingredients:


260 g flour
160 g soft butter
260 g sugar
1 pinch of salt
3 eggs
1 tsp baking powder
1 organic lemon
7 – 8 apples (small, e.g. Boskoop or Cox Orange)
120 g raw marzipan
1 tsp cinnamon
50 g wild cranberries (glass)
450 g sour cream
120 ml milk
1 packet of vanilla sugar
1 packet of vanilla pudding powder (for cooking)
1 tbsp powdered sugar
Also: 1 rectangular mold
Instructions:
Here’s how to make the dough: first knead the butter, 100 g sugar, 1 pinch of salt, 1 egg and the flour mixed with baking powder into a smooth dough. Then roll it out on a floured work surface, line a rectangular/springform pan with it and pull the dough up at the edge.
Prick the base of the dough several times with a fork and leave to cool.
Next, grate the lemon peel and squeeze out the juice. Then peel the apples and cut out the core. Sprinkle the apples with lemon juice. Now knead the marzipan mixture with cinnamon and grated lemon peel.
Then fill the apples with the marzipan mixture and cranberries.
Now mix the sour cream, milk, vanilla sugar, remaining eggs (2), pudding powder and remaining sugar (160 g). Then pour the mixture into the springform pan and place the apples in it.
Bake the cake in the oven at 180 degrees on the lowest rack for approx. 60 minutes – cover with baking paper after about 40 minutes. Allow the cake to cool and serve dusted with icing sugar.
